Day 1 – Battipaglia and surroundings

The itinerary begins in Battipaglia, the historic heart of buffalo dairy production. Inside traditional artisan dairies, visitors can witness the centuries-old craft of cheesemaking: from milk coagulation to stretching the curd, and finally the hand-cutting (“mozzatura”) process, a skilled gesture that gives the product its iconic shape.
The experience engages all the senses: the enveloping aroma of fresh milk, the warmth of the stretched curd and the unique texture of freshly made mozzarella, still warm and delicate.

💡The route often continues towards the buffalo farms, where a close encounter with the animals reveals the importance of animal welfare within the production chain. Guided tastings celebrate the pairing of mozzarella with the local treasures of the territory: Fiaschello Tomato, Rucola della Piana del Sele IGP, Olio Campania IGP and regional wines.

📌 In the afternoon, visitors can choose between the peaceful atmosphere of the WWF Persano Oasis, a true biodiversity sanctuary, and the shade of the hazelnut groves where the renowned Giffoni Hazelnut IGP is cultivated. 

The day ends in the suspended atmosphere of a local agritourism, where the flavours of rural tradition reveal themselves in all their authenticity.

Day 2 – Capaccio Paestum

In Capaccio Paestum, gastronomic excellence meets the timeless heritage of Magna Graecia. The silhouette of the Templi di Paestum dominates the landscape, providing a monumental backdrop to this sensory journey. Lunch becomes a tribute to the land: zero-kilometre dishes highlight the excellence of the Paestum Artichoke IGP, accompanied by the structure of Aglianico wines or the elegance of Fiano and Greco. Many estates offer the opportunity to take part in cooking classes or educational experiences to discover the secrets of traditional rural cuisine.

💡A visit to the Museo della Bufala e della Mozzarella offers deeper insight into the historical development of this sector. Among the local specialties, the “Granato di Paestum” pomegranate is also worth discovering.

In the late afternoon, attention turns to the contemporary interpretations of buffalo milk: creamy yogurts, artisan gelato and refined desserts. Alongside mozzarella, other specialties deserve recognition, including soft ricotta, braided mozzarella and aged caciocavallo cheese. The sunset over the cultivated fields brings the journey to an end, leaving visitors with the memory of a generous and authentic land.
